Garlic Scape Pesto

Serves 4

2oz (50g) garlic scapes, trimmed and chopped into inch pieces
3/4oz (20g) parsley
1oz pine nuts
2 1/2 floz olive oil
1 1/2 oz (40g) parmesan cheese
Salt

Put the scapes, parsley and pine nuts into the food processor. Whiz slightly, add the oil and the salt, blend until smooth. Stir in the parmesan cheese.

Serve with drained pasta, mix into mashed potatoes, toss into new potatoes or mix with creme fraiche for a tasty sauce with chicken!
