Garlic Scape Frittata

Serves 2

2tbsp olive oil
1/2 red onion, chopped
4 new potatoes, cook and sliced
2oz (50g) pancetta, (optional)
2oz (50g) garlic scapes, chopped
4 eggs, lightly beaten
Salt
Freshly ground black pepper

Saute the onion in the oil for 3-4 mins. Add the pancetta (if using) and new potatoes and sauté for 3-4 minutes. Add the scapes and sauté for 1 more minute. Add the eggs and stir into the potato and scapes. Season with salt and pepper. Cook for 4-5 minutes until it is cooked on the bottom half. Finish by cooking the top under the grill. Slice and serve.
