Sausage Meat Stuffing

Enough to stuff a 12-14lb (5.5 - 6.5 kg) turkey

1 onion, finely chopped
2lb / 1kg good quality sausage meat
4 heaped tbsp white breadcrumbs
1 tbsp really garlicky rub
1 egg, beaten
freshly ground black pepper

Combine all the ingredients and refrigerate until ready to stuff the turkey. Ensure it is back to room temperature before you stuff and cook the turkey.
