Salmon with an oatcake and pesto crust

To make the Pesto:
2oz (50g) Basil Leaves
1 Large Really Garlicky Clove Garlic, crushed
1 tbsp Pine Nuts
6 tbsp Extra Virgin Olive Oil
1 oz Parmesan cheese, grated
Salt
3 Really Garlicky Oatcakes
4 Salmon Fillet Pieces
Heat the oven to 200ºC/400ºF/ Gas 6. Put all the pesto ingredients except the parmesan cheese into a food processor or blender and whiz until you have a smooth puree. Then transfer to a bowl and stir in the parmesan cheese.
Put the oatcakes in a plastic food bag and crush with a rolling pin (a great stress reliever!) or put into a food processor and whiz until finely ground. Add 2 tbsp pesto and stir.
Place Salmon pieces on a baking tray and divide the pesto between the four salmon pieces. Place in a hot oven and cook for 10-12 mins until the salmon is cooked.
Serve with a rocket salad and lemon wedges.
