Greek garlic sauce (Skordalia)

INGREDIENTS
4 cloves of garlic or more !!!
4 potatoes boiled and mashed.
1 cup. olive oil.
1/3 cup white wine vinegar.
Salt and pepper to taste.


Combine the garlic with the mashed potatoes . Blend to form a soft paste.
Add olive oil and vinegar alternately in very small amounts, stirring
briskly. Add salt and pepper to taste. Continue to whisk until sauce is
thick.

In some parts of Greece almonds or walnuts are sometimes added. I prefer it
as above.
