Angel Rocks Turkey Breast With Cranberry Garlic Rum Preserve

Ingredients
2 large, boneless turkey breasts split open and pounded flat
4 tbsp. Cranberry Garlic Rum Preserve (to taste)
4 oz. goat cheese
1/2 cup chopped almonds
1 cup whipping cream
Directions
Preheat oven to 350F
1 Mix almonds and cheese splitting among the two breasts. Roll up tight, securing with string if necessary, seam side down.
2 Bake on baking dish covered tightly with foil for 2 hours.
3 Remove from oven and let stand.
4 Slowly bring whip cream to a boil. Whisk in Cranberry Garlic Rum Preserve.
5 Slice turkey breasts into medallions and serve with a long drizzle of seasoned whipping cream.
Note: For an additional layer of garlic flavour add 1tsp. Garlic Mashed Potato Seasoning before rolling turkey breast.
