Fresh Rocket and smoked garlic pesto

100g rocket, washed
1 clove really garlicky smoked garlic
25g toasted cashew nuts
4 tbsp extra virgin olive oil
25g pecorino or parmesan cheese, grated
Salt and Pepper


Put the rocket, smoked garlic and cashew nuts in a food processor and whiz, adding the olive oil in a thin stream through the lid. Stir in the cheese and season to taste.

Stir through hot pasta.


Serves 4
