Summer Cranberry Dressing

Ingredients
3 tbsp. fresh squeezed lemon juice
2 tbsp. olive oil
2 tbsp. Cranberry Garlic Rum Preserve
1 bruised basil leaf
1 bruised clove Really Garlicky garlic

Directions
1 To bruise simply apply pressure with a mallet or back of a knife until the herbs are bruised or split open to release their flavour.
2 Soak bruised garlic and basil in oil for minimum 1 hour. Remove.
3 Whisk in remaining ingredients. Delicious served on a fresh fruit salad.
Note: The discarded garlic and basil may be used in soup, dressings, rice or potato dishes.
