Angel Hair Pasta with Roasted Garlic Oil

Ingredients
1 Courgette
1 Red Pepper
1 large onion
Fresh Mushrooms
1 small container of either cherry or grape tomatoes
Roasted Garlic Oil with Garlic Scapes
Garlic Balsamic Vinegar
Salt and pepper to taste
1 small box of Angel Hair Pasta

Directions
1 Coarsely chop all the vegetables into bite sized chunks, setting the tomatoes aside for now.
2 Drizzle with the oil and stir to combine in a large shallow pan(a roasting pan works too).
3 Sprinkle with salt and pepper if you wish and roast in a 400F/200C/Gas 6 till the veggies are soft and the mushrooms are "dry" for approximately 1 hour.
4 Stir periodically while they're roasting, adding the grape tomatoes about 15 minutes prior to serving.
5 Remove from oven and drizzle with the balsamic vinegar, tossing carefully.
6 Toss over angel hair pasta and serve with some freshly grated parmesan cheese!
