Potato Scones with Bacon

1 tbsp sunflower oil
3 slices bacon, finely chopped
1 small leek, finely chopped
1 clove really garlicky garlic
175g/6oz plain flour
2tsp baking powder
50g/1¨úoz butter
125g/4¨öoz mashed potato
50g/1¨úoz fresh parmesan, grated
2 tbsp fresh thyme, chopped
2 tbsp milk
1 egg yolk, beaten
salt and freshly ground black pepper

Pre-heat the oven to 220¢ª/Gas 7

Heat oil in a frying pan, add bacon, leek and garlic and fry for 3-4 mins until the bacon is crisp.

Sift the flour and baking powder into a large bowl, rub in the butter until it resembles fine breadcrumbs.

Add the remaining ingredients except the egg, and combine well until a soft dough is formed.

Tip out onto a lightly floured surface and press or roll out to a thickness of 1¡±/2¨öcm. Using a 2¨ö¡±/6cm cutter stamp out the scones.

Place onto a baking sheet and brush with beaten egg. Bake in the oven for 10-15 minutes until golden and risen.

Serve warm with soup or cheese.
